I co-founded Zero Procure back in 2020 because I knew procurement could be done differently.

I’d already been working in the hospitality industry for…well my whole life. But I’d previously run a cleaning business for 11 years before I sold it in 2017.

And there’s something I noticed about procurement:

- You either did it yourself…taking time away from your core job
- You could hire someone to do it…but they only have so much buying power
- You could hire a procurement company…that will charge you a percentage of your savings
- Or you could go with option 4…paying just the supplier for your goods, but also getting the best prices

Here’s our cue to come in.

Zero Procure works the exact same as any other procurement company…but you, the customer, don’t pay a thing!

Honestly, it’s as simple as that (we get our cuts from the supplier, not you).

Leading food & beverage strategy and operations across over 60 in the UK and internationally, incorporating Hilton, Marriott, Crowne Plaza, Holiday Inn, VOCO, and some independent sites, covering 4 star properties, resort hotels, ltd service, city centre hotels.  As part of the senior director team I report directly to the company CEO, and work alongside the MD, FD and Directors of Operations to maintain the company position as one of the largest franchisees in Europe. My role involves all aspects of hotel food and drink delivery, concept development, staff training, mentoring and development. On top of the day to day operations, I also provide the group strategy behind profitability, growth, procurement opportunities,  market trends and insight, within the F&B function.  I provide the framework and assist the operational leaders to continue to realise their own potential and be outstanding every day.

Food consultancy and restaurant/hospitality advice. Specializing in new restaurant advice, market segmentation, new restaurant and food trends, drinks advice, modern approaches to food and the industry from gastropubs to multi-accoladed properties. Practical and hands on advice with menu creation, staff training, profit tracking, margin improvements, HACCP construction and advice and many many more industry areas. We are also specialists in kitchen design and planning and can offer contacts/business partners to help from ideas to install. Finally as a business we can advise on food and hospitality websites, social media advice and presence, website construction and composition of copy. This vital area of the modern world is something that can be a headache, we can offer support from web branding to optimising advice, imagery, social media tone and much more.
Projects undertaken;
- 3 site wine bar and tapas concept - from conception, to FOH and BOH design, recipe creation, wine 
  list procurement, mixology and wine training, chef recruitment 
- National chain of fish and chip "diner" style restaurants. Side project of a well known national retailer. 
  Joint creation of concept, kitchen design, F&B ways of working and financial performance tracking
- Food service company - key food operator to Glastonbury VIP areas and Le Mans 24hr race. Creation 
  of a new, more current offer through better supply chain in both UK and France

Crowne Plaza® Hotels & Resorts

Established hotel in the Gerrards cross/Beaconsfield area. I started as instrumental part of the opening team and opening strategy. Creation of new MICE areas, different food concepts, new main restaurant concept, complete supply chain audit and overhaul for all f&b areas. My role involved budget analysis for current and past, including working with FC for totally new processes. Multiple outlets in the business including M&E for 450 pax, a modern European restaurant, 1269, with a focus on open fire and charcoal cooking, and a raw juice/healthy salad gym concept bar. On top of these, the normal "WOW" guest amenities, including a lounge bar, Whiskey bar, R/S, Executive lounge. During the steep growth phase I created a new kitchen design in 3 areas, tripled the brigade size in line with large growth and had many internal success stories. A passion for development, training, food, hospitality, reinvention and success are the foundations of what we achieved. Direct report to the General manager and company directors.

One of the most iconic and prestigious locations in central London - AMBA Charing Cross. 240 bedroom 4 star hotel. I was part of the team that brought about a hugely successful period for the hotel, seeing us climb to the top 5 in all London hotels, increasing all key metrics and managing the birth of a new brand within the market.  Responsible for all F&B activities, including multiple outlets for MICE and restaurant. Increased F&B turnover during my time, raised the presence with BDRC, agents and influencers, rasing the hotel to Gold standard within a year.

The Finesse Collection

Managing all the food and beverage operations across 4 hotel sites, a gastropub and outside events catering business. This includes two 4 star properties and two 3 star. Full autonomy throughout all F&B outlets that include one 2 rosette restaurant, two 1 rosette, Michelin Bib gourmand gastro pub, wine bar and city centre bar/cocktail lounge. Also overseeing the exterior hospitality and events arm which include corporate hospitality for up to 800 pax, Motorsport catering, bespoke home clients, multinational clients and much more. Instrumental in developing a mentor program and worked with all local colleges and schools to provide schemes for learning support in hospitality. Direct report to the CEO.

Took a sabbatical from role after being asked to work with the team at 1 Michelin star, Murano by Angela Hartnett.
Italian led cuisine open for lunch and dinner, with a kitchen facing chefs table.

Taking a 4 day a week sabbatical,  to join the team at the Vineyard under chef John Campbell. At the time the restaurant was 2 Michelin star, 5 rosette rated.

Small country house hotel in the idyllic peak district area. Part of the iconic Chatsworth House Estate in the heart of the Peak district. Founding member of the senior opening team tasked with turning the old farmhouse into a destination boutique hotel and a wedding venue. On site kitchen garden, 60 cover 2 rosette restaurant and a wedding operation for 250 pax doing  30-35 a year.
