Managed the daily operations of room service department at 2,995-room hotel.  Responsible for 1,000 to 2,000 room service covers per day, hospitality parties, wedding services, amenities.  Scheduled 120 team members to include sales agents, cashiers, assistant servers, food servers, and managers.  Oversaw hospitality and wedding parties in suites and casino bars, which range from 10 to over 300 guests.  Also, handled trade shows and conventions that utilize up to 150 suites.  Managed collective bargaining agreement, annual budgeting, capital budgets, and all fiscal matters and business plans.  Interviews and hires all positions.

Key Achievements:
•	Consistently achieved GSS of 90% or above for the past 4 years.
•	Maintains COGS at 18% for beverage and 22% for food.
•	Created department training manual outlining policies  and procedures.
•	Increased productivity by stabilizing staffing levels and implementing training procedures.

Created daily floor plans per shift to ensure proper rotation and coverage of stations, trained employees in the performance of their duties, delegated responsibilities to employees and supervised tasks to completion in a satisfactory and timely manner, effectively communicated with management, chefs and culinary staff to fulfill and address any issues or needs requested by guests and/or other employees.  Streamlined payroll.  Improved steakhouse GSS scores from no ranking to second place in company.  Reduced food and beverage expenditures by 12% and 10%, respectively.

Oversaw the front and back of house management, budget and operations of the food and beverage department, catering of a 2,600-seat theater and maintained relationships with the various departments to include sales, marketing, table games and EVS to ensure maximum guest service and profitability.  Managed the day-to-day operations of food and beverage outlets maintaining quality and profitability standards.  Developed, inspired, led and motivated subordinates to accomplish goals and business plan objectives

Opening team for this new luxury tower, The Cove, made up of 600 suites, as well as, a 500 condo hotel, The Reef. My areas of responsibility included Cain Day Club, an ultra pool and bar featuring an open-air gaming pavilion, a bistro cafe and live entertainment; Aura Night Club featuring two elegant bars, 2 VIP sections, a private VIP parlour, a glass dance floor and raised DJ booth sets; Bobby Flay’s Mesa Grill Restaurant; Starbucks; Mosaic Buffet; The Reef Lounge; Sea Glass Lounge; Room Service and Mini-Bar.  Maintained a property wide beverage cost of 17% and reduce food cost by 10% without compromising guest satisfaction.  Developed and implemented standards and procedure for all lounges and casino bars, which improved J.D. Power guest satisfaction score from 7.4 to 8.2

Senior Director of Food & Beverage

Bally's/Paris Hotel and Casino

Responsible for soliciting all markets for 360,000 sq. ft. complex. Successfully gained new business by placing outbound sales calls, responding to cold calls in a timely manner and telemarketing activities. Other responsibilities included booking large parties for high-end restaurants, forecasting sales, developing menus and coordinating meetings and banquets for local groups, conventions and social events.
